Simply put, this class is about the bits that never go to waste and that have been raised to an art form by peasant farmers, butchers and charcutiers wherever pork is enjoyed.

Starting with some delicious locally grown Barossa pork we will produce a range of dishes including :

Rieswurst, Cruibins, Tete de Fromage, Crispy Fried Ears, Rillettes, Rillons and Gayettes.
