Fragrant Kofta Kebabs


600g                   Chicken mince
80g                      Leeks – about 1/2 – finely chopped (or Spring Onion)
1 clove                 Garlic – crushed
1 tablespoon      Maldon sea salt
1 teaspoon          Ground black pepper
4 tablespoons    Fragrant spice

  • Combine all ingredients and mix well
  • Shape into patties or sausages and grill


Fragrant Spiced Salad of Sweet Potato


1 teaspoon          Fragrant spice
2 teaspoons        Ground cumin
1 teaspoon           Salt
80ml                     Olive Oil
700g                     Sweet Potato – peeled and cut into 1cm cubes
100g                     Almond kernels
30g                        Pumpkin seeds
1 tablespoon       Cumin seeds
50ml                     Vinegar
1 clove                   Garlic – crushed
1 large                    Tomato – diced into 1cm cubes
1 small bunch      Spring Onions – thinly sliced
2 small bunches  Coriander – chop stems, reserve leaves
Salt to taste

  • Mix fragrant spice, cumin and salt to make a spice mix
  • Coat sweet potatoes with a little oil and just over 1/2 the spice mix – roast until tender @ 180c for about 12 minutes – reserve
  • Toss almonds and pumpkin seeds with a little oil and the remaining spice mix, roast lightly @ 180c for about 3 minutes and mix with sweet potatoes
  • Toast cumin seeds in pan until they start to crackle, remove from heat and crush lightly.  Cover cumin with vinegar, add crushed garlic, salt and remaining olive oil to make a dressing
  • In a bowl, toss spring onions, tomatoes, sweet potato mix and chopped coriander with 1/2 the dressing and then plate up
  • Drizzle the remaining dressing on top and around plate and scatter with coriander leaves


Grilled Lemongrass Chicken


1/2 cup                 Kecap Manis
1/4 cup                 Light Soy sauce
1 clove                  Garlic – minced
1 tablespoon       Ginger – grated
1 tablespoon        Lemongrass – minced finely
1 teaspoon          Fish sauce

2 teaspoons         Fragrant spice
1 tablespoon        Sunflower oil

1 tablespoon        Lemon juice
1 tablespoon        Macadamia nuts – chopped
1                             Lime leaf – shredded
1                             Red chili – chopped finely
1                             Spring Onion – chopped finely

  • Mix kecap and soy with ginger, garlic, lemongrass and fish sauce and blend to a smooth paste, divide in two portions
  • Combine one half of the soy mixture with the Fragrant spice and sunflower oil to be used as a marinade
  • Combine the other half with the lemon juice, macadamia nuts, shredded lime leaf, spring onion and chili as a dipping sauce
  • Marinate thin slices or kebabs of chicken or meat in the first portion for at least 15 minutes, grill until cooked taking care not to burn marinade, serve with dipping sauce or freshly squeezed lemon/lime juice


Spiced Yogurt Marinade


3 teaspoons           Fragrant spice
1 teaspoon             Saracen spice
1 cup                       Yogurt – drained
1 tablespoon         Onion – finely grated
1 clove                   Garlic – minced
1 teaspoon            Ginger grated
1 tablespoon        Coriander leaves – chopped
1 teaspoon            Salt flakes
1                             Lemon – juice only

  • Combine all ingredients and marinate items for grilling/roasting
