Bengali Spice Recipe Collection

Bengali Tamator Chaatney

Ingredients:-

120ml                               vegetable oil
2 teaspoons                     Bengali spice
4                                        green chillies – chopped
4                                        cloves garlic  – chopped
5 cm piece                       fresh ginger – shredded into fine matchsticks
1kg                                    ripe tomatoes – diced in approx. 1cm cubes
2 teaspoons                     salt
1/2 cup                             sugar
50ml                                 white vinegar
2                                         limes – juice of
2 tablespoons                   coriander leaf – shredded

Directions:-
  •  Fry Bengali spice in hot oil, add garlic, chilli and ginger and fry gently for 2-3 minutes
  • Add Tomatoes, salt, sugar and vinegar and simmer until well reduced and oil starts to separate at the edges of the pan.
  • Remove from heat and allow to cool slightly, stir through the lime juice and fresh coriander to finish
  • Store in the fridge in a sealable container with a little extra oil floated on top.

 

Sweet & Sour Cabbage

Ingredients:-

1 tablespoon      sunflower oil
2 teaspoons       Bengali spice blend
1 small                onion – chopped
1 clove                 garlic – crushed
2 teaspoon         turmeric
¼                         white cabbage – shredded
2 teaspoons       sugar
1teaspoon           salt
2 tablespoon      vinegar

Directions:-
  • Heat oil and fry Bengali spice until seeds pop
  • Add onion and cook golden, add garlic and turmeric and fry briefly.
  • Toss cabbage through, then add all remaining ingredients.
  • Cook quickly until cabbage wilts and liquids evaporate

 

Fresh Pineapple Chutney

Ingredients:-

1 teaspoon         Bengali spice
½ ripe                Pineapple – diced
3 tablespoons    Caster sugar
150ml                 Vinegar
1 tablespoon      Coriander leaves – chopped
½ teaspoon       Red chilies – chopped

Directions:-
  • Fry Bengali spice until seeds pop, taking care not to burn them as this will result in a bitter flavour that cannot be removed
  • Combine all ingredients and allow to stand for at least one hour before using
